Cooking with Caroline and Dracula Giveaway

Happy October, folks! I absolutely love this month, and not just because Dracula is just around the corner, but also because of some great football games! Whether you’re a Hurricane, Poke or Sooner, these treats will no doubt make you a champion at your tailgate. I’m sharing some of my most coveted recipes – a traditional cheese dip with a little kick, and an untraditional beverage that’s sure to please!
Pimento Cheese Dip
5 large roasted* red bell peppers – chopped
1 cup stuffed green olives – chopped fine
1 ¼ lb. New York Sharp White Cheddar – shredded
¼ cup fresh grated parmesan cheese
¼ cup mayonnaise
1 T. fresh parsley – chopped
½ t. fresh ground black pepper
Dash cayenne pepper
Combine all ingredients in a bowl and mix well. Store in a glass container in the refrigerator overnight. Serve at room temperature. Makes 2 ½ to 3 cups.
*To roast peppers: wash, quarter and seed peppers. Brush both sides with olive oil and place on cookie sheet. Roast in oven at 500 degrees for 15 minutes, turn peppers over and continue roasting another 10 minutes. Cover sheet with plastic wrap and a towel and let steam. When cool, chop to a medium to small chop.
Serve with crackers, bread sticks, rye bread, etc.
Variations: makes great grilled cheese sandwiches. Also try with pasta.
1 can (6 oz) lemonade concentrate
1 can (6 oz) orange juice concentrate
1 cup strong tea (6 tea bags)
1 cup sugar
7 cups water
2 cups bourbon
7 Up or ginger ale
Mix frozen concentrates in a gallon container. Make 1 cup strong tea. Then add sugar to hot tea and stir until completely dissolved. Add tea to concentrates. Add water and bourbon and mix well. Put into the freezer and freeze for at least 24 hours. Fill a glass half full with the frozen bourbon mixture. Fill the rest of the glass with 7 Up or ginger ale and mix. Fun to serve with a straw.
Note: you can add a little more bourbon if you want it a little stronger. ☺
